Hello Again! Breakfast was so normal, until I baked an egg in avocado and it became very fancy.

I had to scoop out a couple of tablespoons of the avocado to make room for the egg. I found a simple recipe from POPSUGAR.

Not sure if everyone is sick of turkey and giving thanks, but all of those leftovers need to fufill their Thanksgiving destiny. TURKEY DAY FOREVER!!!!

There are no rules to The Leftover Thanksgiving Sandwich. No one makes the same fixin’s and everyone has their secret family recipes and traditions. Look, my sandwich is delicous because our secret stuffing recipe is delicious. This year, Jim + I cooked the meal together for the first time, so his mama shared her recipe with us. It’s fabulous and we’re not sharing! (Evil wink.)

My perfect sandwich is a sweet + colorful sandwich. I topped this one with cranberry sauce and my mom’s carrot soufflé. Thanks mom!

After that whole day of cooking, it’s finally time to be lazy and simple! Grab turkey, gravy, stuffing, everything but the apple pie, and eat the not-so-secret sandwich.

Avocado Anything

I recently saw this post on The Kitchn called 10 ways to eat an avocado for breakfast.

Obviously, it got me thinking.

I made a variation of the Avocado Toast, doing my best to capture the yumminess of the moment with my iPhone.

Avocado Toast

1 – 2 slices of multi-grain bread (toasted or not)
1/4 avocado
1/2 cucumber cut into rounds (with or without skin)
handful cherry tomatoes cut into small rounds and sautéed in 1 Tbsp olive oil
1 Tbsp light cream cheese for toast (optional)
drizzle with olive oil
a pinch kosher salt
freshly ground pepper

I added scrambled eggs for some extra protein.

Scrambled Eggs

2 eggs scrambled
sprinkle with dill (optional)
a pinch kosher salt
freshly ground pepper

I topped it off with a coffee and a fancy champagne flute of orange juice.  It was a nice way to start the day.
