Avocado Anything
I recently saw this post on The Kitchn called 10 ways to eat an avocado for breakfast.
Obviously, it got me thinking.
I made a variation of the Avocado Toast, doing my best to capture the yumminess of the moment with my iPhone.
Avocado Toast
1 – 2 slices of multi-grain bread (toasted or not)
1/4 avocado
1/2 cucumber cut into rounds (with or without skin)
handful cherry tomatoes cut into small rounds and sautéed in 1 Tbsp olive oil
1 Tbsp light cream cheese for toast (optional)
drizzle with olive oil
a pinch kosher salt
freshly ground pepper
I added scrambled eggs for some extra protein.
Scrambled Eggs
2 eggs scrambled
sprinkle with dill (optional)
a pinch kosher salt
freshly ground pepper
I topped it off with a coffee and a fancy champagne flute of orange juice. It was a nice way to start the day.
